| 1½ | Teaspoon | cream of tartar | | ½ | Teaspoon | salt | | 1 | Teaspoon | vanilla | | ½ | Teaspoon | almond extract | | 1½ | Cup | egg whites (about 12 large eggs) | | ¾ | Cup | cake flour | | ¼ | Cup | unsweetened cocoa | | 1 | Cup | superfine sugar |

| PREPERATION |
|
seperate eggs, discarding yolks, and place egg whites in large mixing bowl. set aside to bring to room temperature. preheat oven to 350 degrees. set aside very clean, ungreased 10 inch tube pan

| DIRECTIONS |
|
1. sift confectioners sugar, flour, and cocoa together 3 times, set aside.
2. add cream of tartar and salt to reserved egg whites and beat until soft peaks form
3. add vanilla and almond extracr
4. beat in superfine sugar, 2 Tbsp at a time, until egg whites are stiff and glossy
5. sprinkle 2-3 Tbsp. reserved flour mixture over beaten egg whites and fold in gently. continue until all flour mixture has been incorperated.
6. pour batter into ungreased tube pan and bake in preheated oven 50-60 minutes or until cake springs back when lightly pressed
7. invert pan over narrow neck of bottle or funnel and allow to cool completely
8. use long narrow spatula to pull cooled cake from the sides of the pan
9. invert cake onto serving plate
