Pomegranate Panna Cotta w/ Pom Molasses-balsamic syrup

INGREDIENTS
2CupHeavy Cream
2CupSugar
4CupButtermilk -- FULL FAT mmmm
½CupPomegranate Concentrate (purefect puree)
3CupBalsamic Vinegar (for syrup)
3CupSugar (for syrup)
6EachGelatin Leaves
1Each11 oz Pomegranate Molasses (Golden Brand) (for syr
PREPERATION
Panna Cotta:
1. Combine cream and sugar, bring to a boil.

2. Bloom gelatin leaves in cold water, and squeeze out excess water.

3. Dissolve gelatin into hot cream mixture. Allow to cool.

4. Measure buttermilk into a large SS bowl, and then slowly combine warm cream mixture.

5. Add pomegranate concentrate. Portion 6 ounces, and chill overnight.

Syrup:
1. Combine all, and bring to a boil

2. Cool and keep at room temperature, in a plastic squeeze bottle.

PRESENTATION
On Order
1. Place panna cotta into a warm water bath, to free the bottom and sides.

2. Remove from the water, and place a plate upside down onto the panna cotta mold.

3. Turn the plate and panna cotta over, holding them together, and gently remove the cup.

4. Garnish lightly with the syrup, and pomegranate arils (if available).
